Miss bread? Me, too.
This is one option to use as a delivery device for tasty shit like sandwiches and dips.
CLOUD BREAD
Ingredients
3 eggs, separated
3 tablespoons cream cheese
1⁄4teaspoon cream of tartar
1 small packet artificial sweetener of your choice
Directions
Preheat oven to 300 degrees.
Separate the eggs very carefully. If you get yolks, even a little bit of yolk, in your egg whites…you’re fucked and you have to start over.
In a mixing bowl, mix together the egg yolks, the cheese and the sweetener until smooth.
In a separate bowl add the cream of tartar to the whites and, with an electric mixer, beat the whites on high speed until they form stiff peaks.
Very carefully fold the egg yolk mixture into the egg whites until mixed, being careful not to break down the fluffiness of the egg whites.
Grease 2 cookie sheets with a healthy oil of your choice.
With a large spoon, “scoop” the mixture into 10 even rounds on the sheets, about the size of a standard burger bun.
Bake on the middle rack until a light, golden brown – about 20 minutes, but depending on your oven, who knows…start checking in on them after about 17 minutes.
While warm they are crumbly and similar to cooked meringue, but once completely cool, seal them in a ziplock storage baggie or a tupperware over night. Their consistency will morph into something much more like bread – a softer texture that is nice and chewy. They may be a bit floppy for your taste, but they toast up well for sandwiches or dippingif you want a little more “stiffness”in your mouth.
Also, I saw that someone just spread it out into one big “flat cloud” on the pan to make pizza “crust” . I’m totally down with that!
But what I want now is a motherflippin burger (image and idea stolen from the intarwebs..if this were my image, it would have a shit ton of cheese on it as well).
