Today is a monumental day in low carb happiness…
I FINALLY TOOK A SECOND TO MAKE CHAFFLES!
Chaffles, if you’re somehow not aware yet, are basically waffles, low carb lovely fucking waffles, made with eggs, almond flour (often, though there are some without flour at all) and cheese….the cheese making the waffle a CHAFFLE.
I bought this goddamn waffle maker JUST to make chaffles about a month ago but it’s been looming in the corner of my kitchen like a stalker, mocking me every time I look at it for buying a gadget and not using it (god, I’m the worst).
But I made myself make them today…AND THEY TAKE LIKE ZERO EFFORT OR TIME, AND WHAT THE HELL WAS I WAITING FOR??
All you need to make 2 servings of chaffles are:

- A waffle iron
- A measuring cup and measuring spoons
- 2 Eggs
- 2 T Almond Flour
- 1/2 tsp Baking Powder
- 1 Cup Mozzarella cheese
- Cooking Spray so you don’t cry when your chaffle sticks
Whisk the eggs together in a bowl with the almond flour and the baking powder.
Mix in the cheese and set aside.
THAT’S IT, YOU JUST MADE CHAFFLE BATTER. WHY DID YOU WAIT A WHOLE MONTH, YOU LAZY FUCK?
Spray your waffle iron liberally because being liberal is rad. And you won’t cry because of fucked up chaffles.
Pour your batter into the waffle spots (mine has four, yours might have one or two or 10 or whatever, I hope you know how to pour waffle batter…you’ll figure it out).
Slap the lid shut and cook for 3 minutes or to desired done-ness. (is that a word?).

Once they’re the right level of golden brown, remove from waffle iron. Don’t burn yourself like a goddamn idiot like I just did. HEY, DID YOU KNOW WAFFLE IRONS GET HOT?

Serve your Chaffles however you like. I’m into frying up an egg over easy and using the yolk as my “syrup” along with an obscene amount of butter.
Some people like syrup. We bought this Choc Zero keto syrup which has 12 carbs but 1 net carb because of witchcraft I guess? I never trust it, but if that’s your thing, do it.

This recipe makes 2 servings of 2 waffles each.
